I N G R E D I E N T S
Cookie:
- 3 scoops Vitafiber
- 1 scoop Sunwarrior Vegan Protein (chocolate)
- 1 scoop Sunwarrior Vegan Protein (vanilla)
- 2 tbsp cacao powder
- 1 medium egg
Filling:
- 60g quark (found in all supermarkets – naturally fat free soft cheese)
- 1.5 scoop protein powder (I used leftover Casein powder (makes it thicker) – snickerdoodle from Optimum Nutrition)
M E T H O D
- Pre-heat oven to 180C
- Add vitafiber to a bowl and add 30ml boiling water until dissolved – forms a paste
- Add in rest of the ingredients and combine to resemble a mixture slightly more liquidy than your average cake mix
- Pour into a greased tin (I used coconut oil and a large yorkshire pudding baking tray – I couldn’t find anything else) a muffin/cake tray would be ideal
- So I made 4 and cut into halves but would easily make 8 sandwiches.
- Place in the oven for 10-15mins checking regularly and use the clean knife test (stab and see if it comes out clean) to check when ready
- In the meantime mix together the quark and protein powder and leave to chill in the fridge
- When cookies are ready take out of the oven and place on a cooling rack
- Once cooled collect filling from the fridge and stack them up
- Enjoy and tag me in your creations – get experimental with some chocolate chunks, fruity fillings or everyones favourite some peanut butter!
